This Week's Farm Fresh Easy Cooking

When Fresh Tomatoes and Onions are hand smashed and fried together in a pan/pot they become sweeter! To spice things up a bit: We include fresh smashed garlic to make spicy, and fresh basil to bring a bright bitter flavor to counter balance the tomato and onion natural sweetness.

Hands-on Recipe Info & Cooking Demos

Fry/Cook: in one big pan/pot with a spoon/spatula (Use what you already have)

To smash: a potato masher, your hands. To cut: scissors or knife

Try out an Immersion Blender to see how you can make all kinds of soups/sauces

#1 Dry Fry together:

  • Cut Fresh Onions any way you prefer

  • Pull apart Fresh Shitake Mushrooms or cut

  • Any other hard vegetable you cut or smash to cook soft (like Zucchini or Eggplant)

  • FRY everything in your Pan/Pot till soft and/or golden brown (taste to test)

#2 Now Add - Wet Fry to Simmer

  • Smash Fresh Ripe Tomatoes

  • Smash Fresh Local Garlic

  • FRY/COOK everything in your Pan/Pot till hot and bubbly

#3 Last: Add Delicate items that Wilt and/or Spice

  • Scissor cut or hand rip Fresh Sweet Basil, or Spinach, or Kale

  • Taste test to add amount you like of salt, pepper, hot sauce

Adding extra hot water (like from your boiled pasta) - can increase portions served

Pour over Lentils, Beans, Pasta, Baked Sweet Potato or Potato, Ramen Noodles or Rice.
